A Brunch Classic: American Style Pancakes with Bacon & Maple Syrup
Let’s start with the classic fluffy pancake stack done American style. Always with bacon and maple syrup for me.
Dal Pancakes with Curry Leaves, Coconut Milk and Chilli Oil
These dal pancakes were originally made with leftover dal but you should absolutely cook up a batch to make them. They are a cracker and enlivened with the gorgeous aromas from the crisped curry leaves and the punch of bright chilli oil.
Socca (Chickpea Pancake) with Tomato & Aubergine
A joy of a pancake from the South of France (and there are versions elsewhere like Italy too). Fluffy and light, protein-packed and gluten-free (do be sure to get gluten-free baking powder). Top as your heart desires. I love this tomato and aubergine combo.
Kimchi Pancakes (Kimchijeon)
Kimchi pancakes are fabulous and fast and make a terrific supper. An egg on top is not traditional but it works so well. If kimchi is not something you have acquainted yourself with I highly recommend you seek it out. This punchy hot fermented cabbage (don’t bawk – it is fabulous!) is a dream and is probiotic rich too.
Nopi’s Sweet Potato Pancakes with Date Molasses
These from the Nopi cookbook (from recipe maestro Ottolenghi and Ramael Scully) are a perfect brunch. Date molasses is a gorgeous addition and another for your cupboard if you don’t already have it.
Buckwheat Pancakes with Plums, Almonds and Honey
Buckwheat flour has a beautiful savoury nutty flavour which you may already be familiar with from Breton crepes. It is gluten free, and these pancakes can be dairy free too.
