Homemade Bread, Flatbread and Pizza
I love these speedy soda farls, perfect for breakfast, they take minutes to prepare and are gorgeous. No buttermilk? Add yogurt or lemon to regular milk or dairy-free milk, the key is the acid, which activates the bicarbonate and raises the bread. I do recommend stocking up on buttermilk anyway as it has a longer shelf life than milk and is perfect for baking and pancakes.
Blaas are a gorgeous fluffy bread roll native to my home county. I have written about them many times and the recipe is in my cookbook. I traced the bread to Newfoundland and I love this story which shares that. Scroll to the end if you just want the recipe. It is popular and very easy to recreate.
Soda bread is a perfect bread for beginners. It is not only delicious, it is super easy and fast. The trick is light hands and little work, just bring it together, don’t knead it, and it will be perfect and it will have a delicate light crumb. One of my brown soda bread recipes is included here, with oatmeal. I love the quick-pickled cucumber too.
A twist on the classic Irish soda farl with one of my favourite ingredients, seaweed.
Flatbreads & Pizza

Easy peasy and pure joy. You can change the toppings of course and the dough is vegan, so you can do vegan versions if that is required.
Yes, yes, yes, and save all your chicken skin for things like this.
Potato pizza is a completely joyful thing. No guanciale? Substitute bacon for guanciale, equally fabulous.
Snacking Bread (Yes!)
I first had these in Canada, and then with almost every meal in Parma. An absolute delight and a game-changer for your charcuterie.
